Why I Make These Pancakes Every Fall

Real talk: I used to think “light pancakes” meant sad, flat discs that taste like cardboard. Then I mixed pumpkin puree and Greek yogurt into my batter, and everything changed. These healthy pumpkin pancakes stay soft and fluffy, and they keep me full until lunch.

Ever notice how regular pancakes leave you starving an hour later? That happens because classic recipes rely on white flour and sugar. This version brings fiber, protein and real veggies to your plate instead. IMO, that’s a pretty great trade.

What Makes These Pumpkin Yogurt Pancakes So Healthy

Pumpkin: The Fall Superfood

Pumpkin gives you a solid dose of beta carotene, which your body turns into vitamin A for healthy eyes, skin and immunity. It also adds fiber and potassium while keeping the calories low. And the bonus? It makes your pancakes incredibly moist without extra butter.

Greek Yogurt: Your Protein Booster

Plain Greek yogurt packs roughly twice the protein of regular yogurt and gives you gut friendly probiotics too. It also reacts with the baking soda, which creates those fluffy air bubbles we all want. I always go for plain, unsweetened yogurt so I control the sugar myself.

Whole Wheat or Oat Flour

I swap white flour for whole wheat flour or oat flour. Both add complex carbs and more fiber, so your blood sugar stays steady. Oat flour gives a slightly nutty taste that I honestly prefer.

Greek Yogurt vs. Regular Yogurt: My Honest Take

I tested both, so you don’t have to:

  • Greek yogurt: thicker batter, fluffier pancakes, more protein
  • Regular yogurt: thinner batter, flatter pancakes, a bit tangier
  • Skyr: works great too and brings even more protein

My winner? Greek yogurt, hands down.

Storage Tips

  • Fridge: Keep leftovers in an airtight container for up to 3 days.
  • Freezer: Freeze pancakes in a single layer, then move them to a freezer bag. They last up to 2 months.
  • Reheat: Pop them in the toaster for crispy edges. Trust me on this one.

Easy Recipe Variations

  • Gluten free: Use certified gluten free oat flour.
  • Extra protein: Mix in a scoop of vanilla protein powder and add a splash more milk.
  • Chocolate lover: Fold in a handful of dark chocolate chips.
  • Dairy free: Use coconut or almond yogurt and plant milk.
  • Crunchy: Sprinkle chopped pecans or walnuts onto the batter in the pan.

Ingredients for Light Pumpkin Yogurt Pancakes

Servings: 2 (about 8 small pancakes)

  • 1 cup (120 g) whole wheat flour or oat flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 ½ tsp pumpkin pie spice
  • 1 pinch of salt
  • ½ cup (120 g) pumpkin puree
  • ½ cup (125 g) plain Greek yogurt (low fat)
  • 2 large eggs
  • ⅓ cup (80 ml) milk of choice
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp coconut oil or cooking spray for the pan

Toppings (optional): extra Greek yogurt, maple syrup, sliced banana, chopped pecans, a pinch of cinnamon

FYI, use pure pumpkin puree, not pumpkin pie filling. The pie filling already contains sugar and spices, and it will throw off the whole recipe.

How to Make Light Pumpkin Yogurt Pancakes

Prep time: 10 minutes
Cook time: 15 minutes
Total time: 25 minutes
Difficulty: Easy

  1. Mix the dry ingredients. Whisk the flour, baking powder, baking soda, pumpkin pie spice and salt in a large bowl.
  2. Mix the wet ingredients. In a second bowl, whisk the pumpkin puree, Greek yogurt, eggs, milk, maple syrup and vanilla until smooth.
  3. Combine. Pour the wet mixture into the dry ingredients and stir gently with a spatula. Stop as soon as no dry flour shows. A few lumps are totally fine.
  4. Let it rest. Give the batter 5 minutes. This lets the flour soak up the liquid and makes the pancakes fluffier.
  5. Heat the pan. Warm a nonstick pan over medium low heat and brush it lightly with coconut oil.
  6. Cook. Scoop about 3 tablespoons of batter per pancake into the pan. Cook for 2 to 3 minutes, until small bubbles form on top and the edges look set.
  7. Flip. Turn the pancakes carefully and cook for another 1 to 2 minutes until golden.
  8. Serve. Stack them up, add your favorite toppings and enjoy right away.

My Top Tips for Fluffy Pumpkin Pancakes

Keep the Heat Low

Pumpkin batter browns faster than regular batter because of its natural sugars. High heat burns the outside while the inside stays gooey. Ask me how I know.

Don’t Overmix

Overmixing develops the gluten and gives you rubbery pancakes. Stir just until everything comes together, then walk away.

Make Them Small

Smaller pancakes flip much more easily, since pumpkin makes the batter a bit heavier. Who needs a pancake disaster before coffee anyway?
